    CRUSTLESS MUSHROOM GOAT CHEESE QUICHE

    INGREDIENTS:

    1 large onion, chopped

    2 boxes of sliced baby bella mushrooms

    Oil for sautéing

    4 oz goat cheese crumbled

    2 eggs

    1/2 cup shredded cheese – any kind

    works

    1/4 cup milk

     

    DIRECTIONS:

    I make this quiche year round and for pesach I just do it without the pie shell. Mushrooms go so well with goat cheese they both have that real earthy flavor. If you are not a fan of mushrooms, substitute your favorite vegetable. Saute the onions and mushrooms until thoroughly cooked. Transfer to mixing bowl and add in the remaining ingredients. Mix well to combine. Pour into a 8 x 8 pan and bake at 350 for 45 minutes until set and golden delicious.
