    SPECIAL PESACH RECIPES:

    MEATBALLS

    INGREDIENTS:

    2 eggs, lightly beaten
    1 cup water, divided
    1-1/2 cups finely
    chopped onion,
    divided
    1 teaspoon salt
    1/4 teaspoon pepper
    2 pounds ground beef
    1 can (8 ounces)
    tomato sauce
    1 cup sugar
    1/2 cup lemon juice

    DIRECTIONS:

    Pesach will be here soon but don’t worry we will all make it
    to the seder in one piece. Our seder table is one of warmth
    and comfort hosting family and friends. I love cooking for
    our guests and get much enjoyment when they ask for
    more and feel very flattered when they ask for recipes.
    Here are some of our family favorites that are sure to be
    winners at your table.
    In a large bowl, combine the eggs, 1/2 cup water, 1/2
    cup onion, salt and pepper. Combine with beef and
    mix well. Shape into 1-in. balls.
    In a Dutch oven, combine the tomato sauce, sugar,
    lemon juice, and remaining water and onion. Add
    meatballs; bring to a boil. Reduce heat; cover and
    simmer for 45 -65 minutes.

    PESACH APPLE KUGEL

    INGREDIENTS:

    Five apples sliced – any
    variety- I like to mix
    Granny Smith and
    Macintosh
    1 cup orange juice
    Five eggs
    Quarter cup oil
    Three-quarter cup sugar
    Cinnamon
    Quarter teaspoon vanilla
    1 cup matza meal

    DIRECTIONS:

    Apple kugel is a favorite all year round and this version of
    it for Pesach does not disappoint. Feel free to double it.
    It also freezes very well if you decide to make ahead and
    freeze it’s best to reheat uncovered.
    Combine all ingredients bake in greased 8 x 8 square pan
    for one hour in preheated 350° oven.

    PESACH GRANOLA

    INGREDIENTS:

    1/2 lb. matza farfel
    1/2 c oil
    1/2 c brown sugar
    1/2 stick butter/margarine
    1/2 c water
    1/2 c chopped almonds
    1 tsp cinnamon
    Craisins to taste
    Chocolate chips to taste
    Cut up dried fruit to taste

    DIRECTIONS:

    Melt butter/ margarine with oil, water & brown
    sugar. Add remaining ingredients. Spread on
    greased cookie sheet ( I use parchment paper).

    Bake @ 350 for 25 minutes. Turn over occasion-
    ally (especially watch to see craisins don’t burn).

    Easy to make double batches. Add chocolate
    chips after cooking. You can also add coconut
    but we don’t like it.
