    SPECIAL 9 DAYS RECIPES:

    ONE POT MUSHROOM SPINACH ARTICHOKE PASTA

    INGREDIENTS:

    12 ounces fettuccine
    1 (14-ounce) can quartered artichoke hearts, drained
    8 ounces cremini mushrooms, thinly sliced
    1 large onion, thinly sliced
    2 cloves garlic, thinly sliced
    1/2 teaspoon dried basil
    1/4 teaspoon dried thyme
    1/4 teaspoon crushed red pepper flakes, optional
    Kosher salt and freshly ground black pepper, to taste
    2 cups baby spinach
    1 cup freshly grated Parmesan
    2 tablespoons unsalted butter

    DIRECTIONS:

    In a large stockpot or Dutch oven over
    medium high heat, combine fettuccine,
    artichoke hearts, mushrooms, onion, garlic,
    basil, thyme, red pepper akes and 4 1/2
    cups water; season with salt and pepper, to
    taste.
    Bring to a boil; reduce heat and simmer,
    uncovered, until pasta is cooked through and
    liquid has reduced, about 12-15 minutes.
    Stir in spinach, Parmesan and butter until the
    spinach has wilted, about 2-3 minutes.

    MUSTARD GLAZED GRILLED SALMON

    INGREDIENTS:

    1/2 cup Spicy Brown
    Mustard
    4 Tbsp. sugar
    4 Tbsp. water
    2 Tbsp. vegetable oil
    1 tsp. Garlic Powder
    4 lb salmon fillets , skin on
    2 Tbsp. freshly chopped
    parsley and lemon
    wedges for garnish

    DIRECTIONS:

    Salmon is a versatile fish that is very healthy and high in Omega 3s and vitamins. Try this recipe
    for a delicious and nutritious meal. Round it out with a side of steamed broccoli, rice and a greek
    salad for a complete meal.
    Mix mustard, sugar, water, oil, and garlic powder in a small bowl. Reserve 4 tablespoons of
    mixture. Set aside.
    Place salmon in a large resealable plastic bag or glass dish. Add remaining marinade; turn to coat
    well. Refrigerate 30 minutes. Remove salmon from marinade. Discard any remaining marinade.
    Grill salmon, skin side down, over medium heat 15 to 20 minutes or until fish flakes easily with a
    fork. You can use a grill pan or sauté pan. Brush with reserved marinade mixture during last few
    minutes of cooking. Sprinkle with parsley and serve with lemon wedges, if desired.

    SPINACH BROWNIES

    INGREDIENTS:

    1 (10 ounce) package spinach,
    rinsed and chopped
    1 cup all-purpose flour
    1 teaspoon salt
    1 teaspoon baking powder
    2 eggs
    1 cup milk
    1/2 cup butter, melted
    1 onion, chopped
    1 (8 ounce) package shredded
    mozzarella cheese

    DIRECTIONS:

    Spinach is a superfood. It is loaded with nutrients and provides iron, protein,
    vitamins and minerals. We all know that Popeye’s spinach habit helped pump
    his instant muscles – let spinach do the same for you!!
    Preheat oven to 375 degrees F. Lightly grease a 9×13 inch baking dish.
    Place spinach in a medium saucepan with enough water to cover.
    Bring to a boil. Lower heat to simmer and cook until spinach is limp, about 3 minutes.
    Remove from heat, drain, and set aside. In a large bowl, mix flour, salt and baking
    powder. Stir in eggs, milk and butter. Mix in spinach, onion and mozzarella cheese.
    Transfer the mixture to the prepared baking dish. Bake in the preheated oven 30 to 35 minutes, or until a toothpick inserted in
    the center comes out clean. Cool before serving.
