    SPECIAL SUKKOS RECIPES:

    UNSTUFFED CABBAGE

    INGREDIENTS:

    1 (750 ml) bottle ketchup
    1 liter ginger ale
    1 whole cabbage, very
    coarsely shredded
    2 lb ground beef
    1 onion
    1⁄2 cup rice
    2 eggs
    garlic powder
    paprika
    freshly ground black
    pepper & salt

    DIRECTIONS:

    First night Succos, we always have stuffed Cab-
    bage in the Sukkah. For those of you whose life is

    busy, this recipe is uncomplicated, delicious and
    truly a simple version of a holiday delicacy.
    Put the ketchup and ginger ale into a large soup pot
    and bring to the boil. Add the cabbage. In separate
    bowl, mix the rest of the ingredients. Wet hands and
    form meatballs, place gently into the boiling cabbage
    in the pot.
    Bring to the boil, turn heat down, cover and let simmer
    for 1 1/2 hours. Enhance the presentation by serving
    atop of a bed of rice.

    STEAK MARINADE

    INGREDIENTS:

    In a small bowl with
    together the following
    ingredients:
    1/2 cup olive oil
    1/2 cup brown sugar
    1/4 cup soy sauce
    4 cloves of grated garlic
    1/4 cup of lemon juice

    DIRECTIONS:

    You can use this on any steak. I used oyster steak in this recipe but it’s
    delicious on London broil or ribeye and only just takes a couple of simple
    ingredients. If you have the time to let it marinade in the refrigerator couple
    hours great, if not, you can skip that part. Add your steak to marinade in a
    ziplock bag. If you have the time to let it marinade in the refrigerator couple
    hours great, if not, you can skip that part. For these oyster steaks I grilled
    them about 5-6 minutes per side for the perfect medium rare.

    WATERMELON GAZPACHO

    INGREDIENTS:

    Half a large seedless watermelon,
    chopped
    Two Persian cucumbers, chopped
    One large beefsteak tomato, chopped
    Half a large red onion, chopped
    Four cloves of garlic
    One bell pepper, chopped
    One jalapeño, Chopped (seeds, optional).
    Juice of 1 lime
    2 tablespoons olive oil
    2 tablespoons balsamic vinegar
    1 tsp sugar Salt, and pepper to taste

    DIRECTIONS:

    I have to be honest I’m not really a big gazpacho fan,
    but I do love this watermelon gazpacho. It takes all the

    traditional gazpacho flavors but because of the water-
    melon it’s not so heavily tomato based and it has a nice

    touch of sweetness. The best part about it is that

    nothing requires cooking. You’re going to put every-
    thing in your blender to combine and that’s it.
