    Rainbow Cobb Salad

    This week is parshat Noach and after all these chagim we all are trying to watch our waistlines a bit. Try this delicious rainbow cobb salad for Shabbat lunch it not only looks beautiful when serving but tastes delicious also.

    INGREDIENTS:

    • Grilled chicken cutlets – 4 pieces cut in strips.

    • 6 hard boiled eggs cut in ¼’s

    • Lettuce shredded

    • Tomatoes, diced

    • Shredded carrots

    • 4 Cubed avocados

    • 1 package Pastrami cut into pieces

    DRESSING INGREDIENTS:

    • 3 T sugar

    • 2 T lemon juice

    • 1 T Dijon mustard

    • 1 tsp salt

    • ½ cup olive oil

    DIRECTIONS:

    On large rectangle platter arrange salad ingredients in sections. Mix all dressing ingredients well into combined. Pour over salad before serving
