19 Nov Sweet Potato Casserole
INGREDIENTS:
Potato base
3 cups cooked and mashed
sweet potatoes (you can use canned for this to make it easier)
Half a cup brown sugar
Two eggs
1 teaspoon vanilla
One pinch of salt
Half cup melted margarine
1/3 cup soy milk
Topping
1 cup brown sugar
1 cup chopped pecans
1/3 cup flour
1/3 cup melted margarine
DIRECTIONS:
In our family we have a debate about what should top sweet potato casserole. Pecan streusel topping or marshmallows? I am definitely on the pecan streusel team and this is my favorite recipe.
Mix Potato-based together and spoon into casserole dish. Mix topping together and spread over the potatoes. Bake at 350° for 40 minutes
