    BANANA CRUMB MUFFINS

    INGREDIENTS:
    1.5 cups flour
    1 teaspoon baking soda
    1 teaspoon baking powder
    1/2 teaspoon salt
    3/4 cup sugar
    3 large ripe bananas
    1 egg
    1/3 cup melted margarine or you
    can use 1/3 cup applesauce

    DIRECTIONS:

    Bananas – I can never get them right. You know how it
    goes – you don’t have any in the house and suddenly
    everyone wants bananas so you buy and bunch and 4
    days later you are left with mushy overripe bananas. You
    can peel and freeze them for later baking or use in
    smoothies. I love these banana crumb muffins.
    Combine all ingredients and mix well. Fill mun cups about 3/4
    of the way.
    For the crumb topping – I use my sweet promise that I put on
    Challah – make a big batch of this and keep the extra in a baggie
    in the freezer for future use.
    1 cup flour
    1 cup sugar
    1 cup confectioner sugar
    1 tablespoon vanilla sugar
    Mix all together and slowly add oil till resembles crumbs
    Sprinkle crumbs on top of muffins and bake at 375° for
    approximately 20 minutes until toothpick comes out clean.
