05 Aug CITRUS CHICKEN AND POTATOES
INGREDIENTS:
8 chicken bottoms – I used only the thighs
feel free to use whatever pieces you prefer.
1.5 pounds of baby potatoes, cut in half
1 lemon, juiced
1 orange, juiced
1 tablespoon mustard
1/4 cup olive oil
1 tablespoon fresh oregano
(if you don’t have fresh then you can
use 1 teaspoon of dried)
Salt and pepper to taste
DIRECTIONS:
This delicious one pot meal uses
only a few fresh ingredients and is
so easy to make.
Preheat your oven to 350°
In a baking pan, lay your sliced
potatoes and top with your chicken
pieces
Combine all the ingredients for the
marinade together
Pour over the chicken and potatoes.
Bake covered for 1 1/2 hours at 350°
and then uncover it for an additional
1/2 hour.
