21 Apr COLORFUL ISRAELI COUSCOUS SALAD
INGREDIENTS:
1 cup Israeli
couscous
2 cups water
1/2 tsp turmeric
1 tsp olive oil
salt and pepper
Assorted Vegetabes
DIRECTIONS:
This salad is not only beautiful but also tastes
delicious. I bake my Israeli couscous in the oven
and add some turmeric while it’s baking to give it
that gorgeous golden color. Feel free to use
whatever veggies you like.
Preheat your oven to 350 degrees. Combine 1 cup
Israeli couscous, 2 cups water, 1/2 tsp turmeric, 1
tsp olive oil, salt and pepper to taste in an oven safe
dish. Cover tightly and bake for 45 minutes- the
water should be absorbed and your couscous soft
and fluffy. Toss all the ingredients together. Add the
juice of 1 lemon, 2 Tablespoons olive oil and salt
and pepper to taste. You can also add feta cheese
if desired. This lasts several days in the fridge.
