    CUCUMBER EDAMAME SALAD

    INGREDIENTS:

    Salad
    1 bag defrosted shelled edamame
    4-6 Persian cucumbers, chopped
    1 bunch scallions, chopped
    2 avocados, chopped
    Dressing:
    1/4 c olive oil
    1/4 c rice vinegar
    2 tbsp sesame oil
    2 tbsp soy sauce
    1 tsp grated ginger
    1 clove ginger, grated
    Sesame seeds
    Salt to taste

    DIRECTIONS:

    The salad is so easy to make. It is
    light and fresh and delicious.
    What’s great about it is that it
    even gets better the next day so
    feel free to double the recipe!
    Combine all salad ingredients in a
    large bowl.
    List together the dressing
    ingredients and toss gently with
    the salad.
    Sprinkle the top with sesame
    seeds.
