    GRILLED MANGO CHICKEN

    INGREDIENTS:

    4- 5 pounds of pargiot (you can use white
    meat chicken cutlets, but reduce your cooking
    time as they cook quicker than the thighs)
    Marinade
    2 ripe mangoes
    1/2 cup of low sodium soy sauce
    2 to 3 garlic cloves (I didn’t have fresh garlic
    in the house so I use
    the frozen cubes)
    1 teaspoon of freshly grated ginger
    1/4 cup of water

    DIRECTIONS:

    This grilled mango chicken just takes a
    few minutes to put together and uses
    fresh mangos which are in season now.
    The mangos make the chicken so juicy
    it gives a really delicious flavor. Blend all
    the ingredients for the marinade
    together. Toss the marinade with your
    chicken. Preheat your grill. Grill on both
    sides for approximately 6 minutes per
    side – a little less if you’re using chicken
    cutlets as opposed to the pargiot. You
    can also freeze your marinated chicken
    and have it ready to pull out of the
    freezer next time you want barbecue.
