    Hamburger Soup

    INGREDIENTS:

    1 lb lean ground beef

    1 onion , diced

    2 cloves garlic , minced

    2 medium potatoes , peeled and diced

    3 1/2 cups beef broth

    1 can (28 oz) diced tomatoes with juice

    1 8 oz can tomato sauce

    2 teaspoons Worcestershire sauce (make sure you buy the brand without fish)

    1 teaspoon Italian seasoning

    1 bay leaf

    salt and pepper to taste

    3 cups mixed vegetables, fresh or frozen

     

    DIRECTIONS:

    I remember growing up that we would bundle up in our winter coats, hats, scarves and gloves to eat in the sukkah. Now it’s not quite as cold in the sukkah but soup is always a welcome addition. This hearty soup is delicious on its own. Feel free to double it as it freezes beautifully and enjoy and bowl with a nice piece of crusty bread for an easy dinner.

    Brown onion, ground beef and garlic until no pink remains. Drain any fat.

    Add potatoes, broth, tomatoes, tomato sauce, Worcestershire sauce, seasoning and bay leaves. Simmer covered 10 minutes.

    Stir in vegetables. Simmer 30-45 minutes or until potatoes are tender
