    HORSERADISH CRUSTED ROAST BEEF

    INGREDIENTS:
    One 3.5-5 LB Roast
    1/2 cup of grated prepared white
    horseradish
    3 cloves of crushed garlic
    2 tablespoons of Dijon mustard
    Salt and pepper

    DIRECTIONS:

    This is such an easy and flavorful recipe. It would
    make a show stopping centerpiece to any meal.
    Think Purim Seudah.

    Mix all ingredients and shmear all over the roast. Use a meat
    thermometer to achieve the correct temperature. Remember
    if you go too far you can’t go back – better to undercook
    slightly. Roast uncovered in 350 oven until desired
    temperature
    • For a rare roast: 115°F.
    • For medium rare: 120°F.
    • For a medium: 130°F.
    Depending on the size of your roast can cook for 2hrs + –
    check the internal temperature of the meat. Let it sit for 15 to
    20 minutes before serving. As the roast rests, the internal
    temperature will rise 5 to 10 degrees.
