    LAMB RAGU

    INGREDIENTS:

    2 tbsp olive oil
    1 large onion chopped
    2 large carrots, diced
    3 stalk celery diced
    4 cloves minced garlic
    2 lbs ground lamb
    1 cup red wine
    2 tbsp tomato puree

    2 cups beef broth
    (or beef consume
    mixed with water)
    2 bay leaves
    1 can diced
    tomatoes
    1 sprig rosemary
    3-4 sprigs thyme
    1 tsp dried oregano.
    Salt and pepper to
    taste

    DIRECTIONS:

    Rich and delicious and slowly
    cooked packed with tons of
    flavor this lamb Ragu is a
    showstopper.

    Sautee your onions, carrots and
    celery in olive oil until they start
    to soften. Add your lamb and
    garlic and mix to break up the
    lamb until browned. Add the remaining ingredients. Mix to combine.
    Bring to a simmer and cover for 2 1/2 hours stirring occasionally.
    I serve this over pappardelle pasta. They lick the plate clean!! Enjoy!
