    MEDITERRANEAN CHICKEN

    INGREDIENTS:

    2 pounds thinly sliced
    chicken cutlets
    1/2 cup flour
    Salt and pepper to taste
    2 pints cherry tomatoes
    3 to 4 cloves of garlic,
    minced
    1/4 cup sliced Kalamata
    olive
    1/4 cup capers
    1/2 cup white wine

    DIRECTIONS:

    All the flavors I love, tomatoes, garlic, briny, capers, salty olives, and
    white wine combine to make a delicious flavorful chicken dish that
    comes together in just minutes.
    In a large frying pan drizzle some olive oil. Take your thinly sliced
    chicken cutlets and dredge them in seasoned flour. (I season my
    flour with salt and pepper) Pan sear your cutlets on both sides for
    about 4 to 5 minutes until they just start to form some golden color.
    Remove the chicken from the pan and set aside. Add some more
    olive oil if necessary and your cherry tomatoes sliced in half along
    with a couple of cloves of minced garlic. Let those soften and cook
    down for a few minutes. Then add about a 1/4 cup each of sliced
    Kalamata olive and capers along with some of the liquid. Add 1/2
    cup of white wine. Use a wine that you like to drink. Make sure to
    scrape up the bottom of the pan from all those delicious bits and
    pieces from the chicken. Add back in your chicken cutlets cover and
    simmer on a low flame for 15 minutes until the chicken is fully
    cooked through. The juices from the tomato, the white wine and the
    flour from dredging the chicken make a beautiful sauce for your
    chicken. Serve this along with some rice to soap up all the delicious
    gravy from the chicken. Enjoy!
