    OMA’S CHOCOLATE CAKE

    INGREDIENTS:

    9 eggs – 7 separated. Beat the 7 whites until stiff in a separate bowl. Add the remaining 2 whole eggs and 7 yolks to the rest of the ingredients

    2 cups sugar

    2 tsp instant coffee

    1 cup oil

    1/2 cup cocoa powder

    3/4 cup potato starch

    1 tbsp. vanilla sugar

     

    DIRECTIONS:

    This was my favorite pesach cake growing up. My Oma used to make it especially for me every year. I loved it so much, she even made it when it wasn’t pesach. It has a moist and rich chocolatey taste that chocoholics will definitely appreciate. It’s also happens to be non gebrouks!

    Mix all ingredients together. Gently fold in egg whites, don’t overmix. Pour into a spring form sprayed with nonstick cooking spray. Bake at 350 for 50 minutes. Serve with powdered sugar, whipped cream and berries.
