    ORANGE CHICKEN STIR FRY

    INGREDIENTS:

    4 boneless, skinless chicken breasts

    cut into cubes

    salt, to taste

    ground pepper, to taste

    2 heads broccoli, chopped

    2 carrots, sliced

    1 red bell pepper, sliced

    SAUCE

    1/2 cup orange juice

    1 tablespoon soy sauce

    1 tablespoon honey

    1 tablespoon rice vinegar

    2 cloves garlic, minced

    1/2 teaspoon ginger, minced

    1/4 teaspoon orange zest

    1 tablespoon cornstarch

     

    DIRECTIONS:

     

    I love making a good stir fry for

    dinner. It’s so quick and easy

    and the best thing about it is

    you can just use whatever

    vegetables you have on hand.

    This orange chicken stir fry

    comes together in minutes.

    Served over brown rice it’s

    delicious.

    In a large nonstick skillet, heat a

    small amount of cooking oil. Add

    chicken. Season with salt and

    pepper and cook until browned,

    about 5 minutes. Remove from

    pan and set aside.

    Add carrots, peppers and broccoli and cook for 3 minutes. Whisk the sauce ingredients and

    add the veggies. Add chicken back into pan. Cook about 5 minutes until sauce thickens.

    Serve over rice.
