    Pesach Meatballs

    INGREDIENTS:

    2 eggs, lightly beaten
    1 cup water, divided
    1-1/2 cups finely chopped onion, divided
    1 teaspoon salt
    1/4 teaspoon pepper
    2 pounds ground beef
    1 can (8 ounces) tomato sauce
    1 cup sugar
    1/2 cup lemon juice

    DIRECTIONS:

    Pesach will be here soon but don’t worry we will all make it to the seder in one piece. Our seder table is one of warmth and comfort hosting family and friends. I love cooking for our guests and get much enjoyment when they ask for more and feel very flattered when they ask for recipes. Here are some of our family favorites that are sure to be winners at your table. In a large bowl, combine the eggs, 1/2 cup water, 1/2 cup onion, salt and pepper. Combine with beef and mix well. Shape into 1-in. balls. In a Dutch oven, combine the tomato sauce, sugar, lemon juice, and remaining water and onion. Add meatballs; bring to a boil. Reduce heat; cover and simmer for 45 -65 minutes.
