    POT LEMON CHICKEN WITH ORZO

    INGREDIENTS:

    2 lbs pargiot diced
    salt, pepper, onion, garlic
    and paprika
    Olive Oil
    1 cup orzo
    2 cups chicken broth
    juice of one lemon
    5 ounces spinach

    DIRECTIONS:

    2 lbs pargiot diced (or white
    cutlets if you prefer) Season with
    salt, pepper, onion, garlic and
    paprika Sauté chicken in olive oil
    until just cooked. Remove from
    pan. Add 1 cup orzo, 2 cups
    chicken broth, juice of one lemon
    and 5 ounces spinach. Bring to a
    simmer. Add back the chicken,
    cover the pan and let simmer
    12-15 minutes until most of the
    liquid is absorbed.
    So delicious and easy to make.
