11 Jun Potato Salad
Hopefully the weather is starting to get nicer and with that it means it’s
BBQ season!! Nothing better than a delicious potato salad to accompany
your BBQ. I like this one in particular, because it is not mayonnaise based and a little
lighter. It also has capers in it, which I love. I hope you will enjoy it
as well. Try it at your next BBQ or as a side dish.
INGREDIENTS:
1 lb small red
potatoes
2 Tbsp lemon juice
1/2 tsp salt
1/4 tsp pepper
1 Tbsp olive oil
1 tsp lemon zest
1 garlic clove, minced
1 Tbsp parsley
1 Tbsp capers
DIRECTIONS:
Steam the potatoes for 12 minutes until fork tender.
Remove and dice into small chunks. Combine the remainder
of the ingredients in a cruet and shake well to blend. Pour of
potatoes and serve. I love this served warm but its great straight
from the fridge as well
