    RISOTTO

    INGREDIENTS:

    3 Tbsp butter

    2 Tbsp olive oil

    1 Tbsp crushed garlic

    1.5 cups arborio rice

    Caramelized onions (1/4 cup – can add more to your taste)

    Sautéed mushrooms (1/4 cup -can add more to your taste)

    Frozen peas – 1/2 cups defrosted

    2/3 cup dry white wine

    8 cups pareve consume soup

    3/4 c grated Parmesan

     

    DIRECTIONS:

    One of my favorite dairy sides is risotto. Takes a little bit of patience to make but it’s so worth it.

    In large sauté pan melt butter and oil. Add garlic. Sauté a few minutes. Add aborio rice and mix to coat. Add the wine – stirring for a few minutes until liquid absorbed. Add in mushrooms and onions. Add 1 cup of soup at a time – stirring each cup and waiting until absorbs. The rice will absorb 8 cups of liquid. This process will take about 30 minutes. Add peas and Parmesan. Stir to combine. Season with salt and pepper to taste.
