    1 packet onion soup mix

    1/4 scant cup olive oil

    1 chicken in eighths

    2 medium potatoes cubed

    2 large carrots sliced

    1/2 cup chicken consomme



    Hothouse Cucumbers –

    Diced Small

    Grape Tomatoes –

    Halved or Quartered

    Red Onion – Diced Small

    Peppers (Red, Orange and Yellow) Diced Small

    Salt and Pepper to taste



    Summer is all about taking it easy and spending less time in the kitchen. As you know, I’m all about quick and easy dinners in general –

    Here is one of my favorite recipes. It is a winner with the entire family.

    Pair this with a simple Israeli salad (recipe below) and you’ve got dinner made in a snap.

    Preheat oven to 450°F. Combine all ingredients in large plastic bag Mix until chicken and vegetables are evenly coated with seasoning. Arrange chicken with skin side up together with vegetables on sheet pan. Bake uncovered for approximately 1 hour until chicken is thoroughly cooked and vegetables are tender.
