    SILAN AND POMEGRANATE ROASTED CHICKEN

    INGREDIENTS:

    Chicken cut in 1/8ths
    1 large onion, sliced
    1/3 cup pomegranate
    molasses
    2 tbsp silan
    2 tbsp Dijon mustard
    1 tsp garlic powder
    2 tsp olive oil
    Salt and pepper to taste

    DIRECTIONS:

    Place the sliced onion in the bottom of a roasting pan and top with the chicken
    pieces. Put all the remaining ingredients on top of the chicken and massage them
    in so everything is coated. Cover your chicken with a piece of wet parchment and
    tinfoil. Place in a 350° oven for an hour and a half covered then uncover for 45
    minutes until the top is brown, caramelized, and delicious.

    DIRECTIONS:

    This basil, lemon vinaigrette is so fresh and vibrant and tastes like summer. Use it
    as a marinade for chicken or salmon or as a salad dressing.
    In a blender, add 2 cups packed fresh basil, 1 cup extra-virgin olive oil, zest and
    juice of one lemon, salt, pepper, and garlic to taste.
    Purée until smooth. This also freezes great. It’ll last in the fridge for about a week.
