    SPECIAL BREAK THE FAST RECIPES:

    CHOCOLATE CHIP COOKIES

    INGREDIENTS:

    1 cup brown sugar
    1/2 cup sugar
    1 cup oil
    2 eggs
    1 teaspoon vanilla
    2.5 cups flour
    1 teaspoon baking soda
    1/2 teaspoon salt
    1 1/2 cups Chocolate chips

    DIRECTIONS:

    Looking for the perfect chocolate chip cookie
    recipe? Look no further- these are easy to
    make. Perfectly chewy and delicious.
    Beat sugars and oil together. Add eggs
    and vanilla and mix. Beat in the flour,
    baking soda and salt. Mix in the chocolate
    chips.
    Take walnut sized balls and place on
    cookie sheets lined with parchment paper.
    Bake at 350 for 10 minutes

    ZUCCHINI RAVIOLI

    INGREDIENTS:

    3 large zucchini
    1 16 ounce container
    low-fat ricotta cheese
    1 jar of marinara
    sauce
    1 cup of shredded
    cheese
    1 egg
    3 tablespoons of
    Parmesan cheese
    Salt, pepper and dried
    parsley to taste

    DIRECTIONS:

    With a peeler peel the zucchini lengthwise into narrow strips.

    In a separate bowl mix together the ricotta, Parmesan, egg and season-
    ing.

    Take four strips of zucchini, 2×2 creating a cross at 90 degree angle (so
    that it looks like a hashtag sign).
    Take a spoonful of ricotta filling in the middle and fold the zucchini up
    and over in both directions. Layer zucchini in a 9 x 13 tray. Pour a jar of
    your favorite marinara sauce over it and sprinkle shredded cheese on
    top. Bake at 350° covered for 45 minutes and uncovered for 25 minutes.

    SPINACH BROWNIES

    INGREDIENTS:

    1 (10 ounce) package spinach,
    rinsed and chopped
    1 cup all-purpose flour
    1 teaspoon salt
    1 teaspoon baking powder
    2 eggs
    1 cup milk
    1/2 cup butter, melted
    1 onion, chopped
    1 (8 ounce) package shredded
    mozzarella cheese

    DIRECTIONS:

    Spinach is a superfood. It is loaded with nutrients and provides iron,
    protein, vitamins and minerals. We all know that Popeye’s spinach
    habit helped pump his instant muscles – let spinach do the same for
    you!!
    Preheat oven to 375 degrees F. Lightly grease a 9×13 inch baking dish.
    Place spinach in a medium saucepan with enough water to cover.
    Bring to a boil. Lower heat to simmer and cook until spinach is limp, about 3
    minutes. Remove from heat, drain, and set aside. In a large bowl, mix flour,
    salt and baking powder. Stir in eggs, milk and butter. Mix in spinach, onion
    and mozzarella cheese. Transfer the mixture to the prepared baking dish. Bake in the preheated oven 30 to 35
    minutes, or until a toothpick inserted in the center comes out clean. Cool before serving.
