    SPECIAL PESACH RECIPES!

    UNSTUFFED CABBAGE

    INGREDIENTS:

    1 large cabbage, cored and sliced
    1 1⁄4 cups ketchup
    1 15oz can diced tomatoes
    4 cups ginger ale
    2 lbs chopped meat
    1 egg
    Salt and pepper to taste

    DIRECTIONS:

    All the avor of stued cabbage without the eort.
    Unstued cabbage is an easy and delicious way to enjoy
    the taste of traditional stued cabbage but without the
    work. In a large pot, add the ketchup and ginger ale, stir to
    combine. Add the diced tomatoes and chopped cabbage.
    Combine the chopped meat, egg, salt and pepper. Roll into
    meatballs. I prefer them smaller sized around the size of a
    quarter in diameter. Add to the pot. Cover and cook on
    medium ame for 1 1⁄2 hours.

    PESACH ONION CHICKEN

    INGREDIENTS:

    8 chicken thighs
    2 large onions,
    chopped
    1 tablespoon oil
    1 tablespoon salt
    1/2 tablespoon onion
    powder
    1/2 tablespoon paprika
    1 cup water

    DIRECTIONS:

    I bake my quinoa in the oven using 2 cups of quinoa to 4 cups of water, a drizzle of oil and some seasoning. Cover
    tightly and bake at 350 for 45 minutes until the water is absorbed. Scramble two eggs and then dip your chicken
    cutlets in the egg, and then into the cooled quinoa, pat it on both sides to make sure that the quinoa is sticking
    to the cutlet. In a large frying pan, heat oil and add your cutlets. Make sure your oil is hot before you put in the
    cutlets. Do not overcrowd the pan. Allow the quinoa to start getting brown and you’ll see the edges of the
    chicken cutlets turning white before you ip them. You only want to ip them once. About 3 to 4 minutes per
    side depending on the thickness of your cutlets. Put them on a cooling rack and sprinkle with some nishing salt.

    PESACH GRANOLA

    INGREDIENTS:

    1/2 lb. Matza farfel
    1/2 c oil
    1/2 c brown sugar
    1/2 stick butter/margarine
    1/2 c water
    1/2 c chopped almonds
    1 tsp cinnamon
    Craisins to taste
    Chocolate chips to taste
    Cut up dried fruit to taste

    DIRECTIONS:

    Who says you only need to eat Matza and cream cheese for breakfast? We made this
    delicious yogurt parfait with @normansdairy Greek yogurt, homemade granola and
    fresh berries. You can also eat it like cereal! Melt butter/margarine with oil, water &
    brown sugar. Add remaining ingredients. Spread on greased cookie sheet ( I use
    parchment paper). Bake @ 350 for 25 minutes. Turn over occasionally (especially watch
    to see craisins don’t burn). Easy to make double batches. Add chocolate chips after
    cooking. You can also add coconut.

    PESTO GRILLED CHICKEN

    INGREDIENTS:

    3 pounds chicken
    cutlets, butterflied
    10 frozen basil cubes
    5 frozen garlic cubes
    1/2 cup olive oil
    Salt and pepper to taste

    DIRECTIONS:

    This simple delicious recipe is great for Pesach but also at any time during the
    year. It takes only a few ingredients and you can have delicious chicken dinner
    on the table in no time. Combine all ingredients and pour over chicken cutlets
    in a large Ziploc bag. Allow chicken to marinate six hours to overnight. Preheat
    grill or indoor grill pan and grill remove chicken from marinade, grill until
    cooked through.
