    SPECIAL SUKKOS RECIPES:

    ONE POT LEMON CHICKEN WITH ORZO

    INGREDIENTS:

    2 lbs pargiot diced
    salt, pepper, onion, garlic
    and paprika
    Olive Oil
    1 cup orzo
    2 cups chicken broth
    juice of one lemon
    5 ounces spinach

    DIRECTIONS:

    2 lbs pargiot diced (or white cutlets if
    you prefer) Season with salt, pepper,
    onion, garlic and paprika Sauté chicken
    in olive oil until just cooked. Remove
    from pan. Add 1 cup orzo, 2 cups
    chicken broth, juice of one lemon and 5
    ounces spinach. Bring to a simmer.
    Add back the chicken, cover the pan
    and let simmer 12-15 minutes until
    most of the liquid is absorbed.
    So delicious and easy to make. Enjoy!

    IMA’S GRUNKERN SOUP

    INGREDIENTS:

    3 large carrots,

    chopped
    2 large onions, chopped
    1 package meat bones
    1 package whole
    Grunkern
    12 qts chicken broth
    Salt and pepper to taste

    DIRECTIONS:

    Do you have a memory of food from your
    youth? I have so many – including this
    grunkern soup my Oma used to make.
    Combine all the ingredients in a large
    stockpot and let it come to a boil for 4 to 5
    hours. Freezes well.
    So good – just like Oma made.

    WATERMELON GAZPACHO

    INGREDIENTS:

    Half a large seedless watermelon,
    chopped
    Two Persian cucumbers, chopped
    One large beefsteak tomato, chopped
    Half a large red onion, chopped
    Four cloves of garlic
    One bell pepper, chopped
    One jalapeño, Chopped (seeds, optional).
    Juice of 1 lime
    2 tablespoons olive oil
    2 tablespoons balsamic vinegar
    1 tsp sugar Salt, and pepper to taste

    DIRECTIONS:

    I have to be honest I’m not really a big gazpacho fan,
    but I do love this watermelon gazpacho. It takes all the

    traditional gazpacho flavors but because of the water-
    melon it’s not so heavily tomato based and it has a nice

    touch of sweetness. The best part about it is that

    nothing requires cooking. You’re going to put every-
    thing in your blender to combine and that’s it.
